I'm always trying to come up with interesting ways to jazz up vegetables. With the price of cauliflower starting at $5.00 this season, I am always taking advantage to cooking one of my favorites cruciferous vegetables.
Cauliflower is an excellent source of Vitamins C, K, B5, B6, and Folate. It contains large concentrations of sulphur-containing phytonutrients that are great for detoxification, is an antioxidant and food for inflammation. So what could be better than trying to eat this tons of ways!
If you have thyroid issues, be careful and make sure you cook your cauliflower as raw cauliflower contains goitrogens, which can worsen your symptoms. But enjoy cooked!
1 medium head of cauliflower, cut into florets
1 cup of olives, (pick your favorite)
The juice and zest of one orange
2 tbsp coconut oil, melted
Salt to taste
Preheat oven to 350℉
Toss cauliflower with 1 tbsp of coconut oil, place on cookie sheet and cook for 30 minutes, until soft
Coarsely chop olives, mix with orange zest, juice and remainder of coconut oil
Remove cauliflower when done and toss in mixture
Add salt to taste
Eat well. Work hard. See you in a heartbeat.
