My semi-plant-based life

I've been playing around with plant based foods for the past few years and it's amazing how creative you can really get.  The possibilities are endless!  Now, I don't truly believe that plant-based foods can ever replace the taste of real meat, but it sure can come really close. 

One of the most versatile plant-based foods is tofu.  But is tofu good for you?

The pros: 

  • Packed with 29 grams of complete proteins in 100 gram serving 

  • Low in carbohydrates and fat and

  • High in minerals like copper, iron and magnesium.  

The cons: 

  • Soy is a photo-estrogen and can disrupt the regular rotation of estrogen through the body.  Can cause hormonal disruption problems in some women.

  • Genetically modified, soy is in the top ten of genetically modified grain, so when choosing it, make sure it is non-GMO and organic. 

I chose to eat tofu, not on a regular basis, but like everything else, in moderation.  So today, as I was thinking of what to do with my tofu, I was thinking of chicken parmesan.  The crispiness of it, the cheesiness...the sauce!  All of it!! 

Give it to me now!!! 

So I thought....eggplant....tofu?????  I thought to myself that I could change some ingredients around and make this an amazing dish! 

Here are the details: 


1 package extra-firm, organic tofu

1 egg

1/2 cup almond flour

1/2 cup grated parmesan

1 tbsp of Italian herbs

2 medium zucchini

1 tbsp of olive oil

3 cups mushrooms

1 red pepper

2 cups of spinach

1 can diced tomotoes


  1. Pre-heat oven to 385 degrees, place parchment onto baking sheet

  2. Cut tofu into square blocks, wrap in paper towel and drain

  3. Grate parmesan into a bowl and add almond flour and spices, coat the tofu with the mixture.

  4. Place tofu blocks on baking sheet and bake for 20 minutes.

  5. While the tofu is baking, slice the mushrooms and dice the peppers.

  6. Place a pan on the stove over medium heat, cook mushrooms until slightly soft and add peppers until cooked.  Add in diced tomatoes and cook for 10 minutes.  Add spinach at the end. 

  7. Spirialize the zucchini, 2 zucchinis will make 4 portions. 

  8. Flip over the tofu and bake for another 5 minutes. 

  9. Layer the sauce over the noodles and top with the tofu and a little more sauce

  10. Enjoy!!!
